Ingredients
1a) 2.2 lb chicken thighs
1b) 16 oz white mushrooms, sliced
1c) 1 Tbsp Dijon mustard
1d) 1 tsp oregano, chopped
1e) 1 cup water
1f) 1 Tbsp Better than Bouillon Chicken
1g) 5 oz heavy cream

2a) 1/2 tsp xanthan gum

Instructions
3a) In a slow cooker, add the onion, garlic, mushrooms, Dijon mustard, oregano, and chicken stock. Next, add the chicken.
3b) Cook on low for 6 hours.
Remove the chicken breasts from the slow cooker.
3c) In a bowl, mix the cornstarch and water until it forms a paste. Stir the cornstarch mixture and the cream into the liquid in the slow cooker.
3d) Return the chicken to the slow cooker.
3e) Switch the slow cooker to high and cook for 30 minutes or until thickened.
3f) Season with salt and pepper.
3g) Serve & Enjoy
