Directions:  
Mix together ricotta, parmesan, thyme, and a sprinkle of the salt. Set aside. Mix together the arugula, oil, lemon juice, a sprinkle of the salt, and pepper. Set aside. Fry egg to desired taste.
Spread riccota mixture on bread. Top with arugula mixture. Then top with fried egg. Sprinkle with more salt and pepper.
Good served with pickled carrots.
