Ingredients:  Makes 4 servings

Heat large saucepan to medium. Add olive oil.

Place fish dark side up. Cover with chopped olives, salt and pepper.

Squeeze juice of 1/2 lemon over fish.

Drain tomatoes very thoroughly. Then spread over fish and sprinkle with Feta cheese.

Cover and cook for 4 to 6 minutes without turning or stirring or until fish is opaque or flakes easily.

Reduce heat to low and and remove cover. cook 2 minutes to allow any extra liquid to evaporate.
