Description: Bran flakes cereal, raisins, and buttermilk, baked into bread.

Directions:

Preheat oven to 350°F. Lightly grease non-stick loaf pan.

Combine two third of bran flakes, hot water, and oil in a small bowl and set aside.

Combine flour, baking powder, baking soda, brown sugar, cinnamon and nutmeg. Mix until blended and make a well in the center.

Combine buttermilk, egg, and grated orange peel.

Add buttermilk mixture to flour mixture and mix until blended. Batter will be lumpy. Do not over mix.

Stir in softened cereal, remaining dry cereal and raisins.

Pour batter in to prepared loaf pan.

Bake for 50 to 55 minutes or until toothpick come out clean when inserted into the center of the bread.

Let cool for 10 to 12 minutes in the pan and then remove from pan and cool completely.
