erica's energy bites

1/2  cup		raw cashews, 1/2 cup raw cashews, 1/2 cup almonds/ 1/2 cup raw pecans
1/2  pinch		tsp. kosher salt
4  cups		unsweetened coconut flakes
1-1/2  cups		smooth peanut butter
1/2  cup		honey
1/2  cup		chia seeds, 1/2 cup flax seeds
4  ounces		choc chips

place nuts, seeds and 1/2 of coconut on sheet and toast in 300 degree oven
for 15 minutes stirring once.....Cool
place in food processor and pulse 3 or 4 times till mixture resembles coarse crumbs
in microwave place honey and peanutbutter for 30 seconds blend then combine the nut and seed mixture and remaining coconut ...allow the mixture to cool and then add the chocolate chips.

scoop mixture by tablespoon onto prepared baking sheet...roll into a ball ..place in the refriderator till chilled and firm...may keep at room temp...but I prefer them chilled!
