Heat oil in a large saucepan. Add onion and garlic and sauté for 3-4 minutes. Add celery, and seasonings and cook for a few minutes more. Add lentils and stock to the saucepan and bring to a boil.

Reduce heat and simmer for 35-40 minutes or until lentils are tender. Before serving, stir in baby spinach leaves until they wilt and add salt and pepper to taste.
