Heat oven to 350º, and line a baking sheet with parchment paper.
Butterfly chicken, and open out flat.
Layer sliced sun-dried tomatoes, sliced olives, sliced cheese, and chopped spinach.
Fold breast over, and wrap with prosciutto to seal.
Place on baking sheet and cook for 30 minutes or until chicken is cooked and prosciutto is crisp. Turn about every ten minutes to brown evenly.
