Crack egg or use all egg whites, whip lightly in bowl to fluff pancake. Add instant oatmeal, let stand a few minutes to soak egg into oatmeal. Can add ground almonds or other nuts (1/4 cup). Mix and spread in hot skillet sprayed with Pam. Use the back of a spoon to spread thinly. Cook until brown on one side, turn and brown the other side. Serve with jam, peanut butter, Nutella, honey or syrup.
