Blueberry Crisps With Oatmeal Crust
Combine in a bowl:
2 cups blueberries
2 tablespoons sugar or to taste
1 tablespoon lemon juice
1 tablespoon cornstarch
1 tablespoon unbleached flour
To make the crispy topping, combine the following in a bowl:
½ cup oatmeal
¼ cup brown sugar
2 tablespoons whole wheat flour
1 tablespoon maple syrup
1 tablespoon melted butter
Coat four 4-ounce ramekin molds with nonfat cooking spray. In each, spoon in ½ cup of the blueberry mixture and top with 2 tablespoons of topping. Bake in a 375º oven for 8 to 10 minutes.
Serves 4; 211 calories and 3.5 g fat per serving.
