Directions:  
Slice squash in half and remove seeds
place on lined baking sheet with carrots (unpeeled) and the onion sliced in half. Drizzle with Olive Oil and bake at 375 for 45 minutes
Remove and cool
Scrape squash into a pot set on low, add carrots and onion
add broth, coconut milk and spices
Blend with a stick blender
allow to heat through, add more broth to desired thinness
