Scoop flesh out of sweet potatoes and set aside

Combine ground chicken and mushrooms and mix well with your hands

Heat a skillet to medium-high heat and add chicken/ mushroom mixture.

Cook till chicken begins to brown.

Add diced onion and continue cooking till chicken is no longer pink.

Drain off any excess liquid.

Add barbecue sauce and continue cooking till heated through. Turn heat off but leave pan on burner.

Preheat your oven broiler to high.

Add sweet potato flesh to chicken mixture and stir to combine all.

Place sweet potato shells on a baking sheet and scoop mixture into them.

Top with shredded cheese.

Broil for approximately 5 mins.
