Directions:  
Make enough grilled veges for all sandwiches, and use them throughout the week. Slice veges 1/4" thick. Spray with olive oil, and sprinkle with salt and pepper, and a bit of oregano and thyme (or marinade them in the above plus some balsamic vinegar). Grill or broil on one side until charred. Then turn, give them the same spray and sprinkle treatment if not marinated, and grill or broil until the other side is charred.

Slice red onions and tomatoes.

Put shredded cheese on top of the eggplant or another fairly flat vegetables, and melt in the microwave.

Assemble sandwich.
