Miracle Muffin - Tropical

1  cup		flax seed meal
1  cup		oat flour
1  cup		rolled oats
1/2  cup		vanilla egg white protein powder
1  tablespoon		pumpkin pie spice
2  teaspoons		baking soda
1  teaspoon		baking powder
1/2  teaspoon		salt
1-1/2  cups		grated carrots
1/2  cup		walnut pieces
1-1/2  cups		mashed banana
8  ounces		crushed pineapple in pineapple juice
1/4  cup		Sugar Free Maple Syrup

Toast walnut pieces at 450 for 5 minutes ... don't burn ... remove from oven as soon as you smell the scent!

To make flax seed meal, blend about 1/2 C. plus 1 T. flax seeds.

To make oat flour, blend a scant cup of rolled oats.

Combine all dry ingredients. Add grated carrots and dried fruit and mix.

Whisk together all dry ingredients. Add grated carrot and mix.

Mash banana. Add pineapple with its juice and sugarless maple syrup and mix.

Combine all. Batter should be stiff, not pourable.

Spoon into lined muffin tin - batter should fill the tin and even be over the top ... pile it up.

Bake at 350 for 30 minutes, until toothpick inserted comes out clean.
