Directions:  
Cook the rice according to package directions. Heat a medium-sized frying pan over medium heat, add the oil, and cook the carrots for 1 minutes. Add the onion and stir-fry for 2 minutes. Add chicken, peas, and soy sauce, and continue stir-frying for another minutes. Crumble the rice into the pan. Cook, stirring, until heated through. Sprinkle with sesame oil and red pepper and serve.
