In a large bowl, whisk together almond flour, erythritol, baking powder and salt. Set aside.

Melt the cheese in a microwave-safe bowl.

Add the egg and vanilla to the melted cheese.

Add the wet ingredients to the dry ingredients.

Mix dough together with your hands until it forms a ball. Add more almond flour if needed.

In a shallow pot or skillet on the stove, heat the coconut oil.

Pull off a chunk of the dough, form into a ball and place in hot oil.

Cook a few beignets at a time for about 5-6 minutes until golden brown.

While still warm, dust with super fine unsweetened shredded coconut.
