Directions:
Crack eggs into bowl and whip with fork. Chop ingredients above, substituting similar items from leftovers in frig. stir fry, saute in the olive oil, the meat and veggies and set aside. add bacon to frypan and warm over medium low heat. Reduce heat and add egges to blanket the bottom of the fry pan. When the the eggs are partially cooked (while there is still a thin layer of uncooked on top), add the cooked veggies and meat along the area of the fold. Put the cheese on top of the veggies and "fold over" the egg, continuing to slowely cook of low heat until eggs are firm and cheese is melted. Move this to your plate. Add sourcream and pico de gallo on top. Enjoy.
