Directions:  
Over medium heat, place oil in skillet. Add eggs and scramble until cooked buy not dry. Transfer to plate and season with salt & pepper. Wipe out skillet and return to heat. Add tortilla and cook on both sides until warmed. Top one half of it with cheese, and then eggs. Fold over, and cook until heated through. Cut in half and serve.
