Cut Eggplant in 1/2 inch rounds.

Place Eggplant slices in 9x13 baking dish

Sprinkle with Garlic Powder

In a separate bowl, mix ricotta and most of mozzarella and parmesan.

Spread cheese mixture and then cooked ground turkey breast over eggplant

Spread spagetti sauce over cheese mixture

Sprinkle remaining cheese on top

Bake at 350 degrees for 30 minutes.
