Trim the fat (all)

cut into 1 inch slices

arrange the strips on a pan

combine ingredients (not beef) into liquid

pour liquid on the strips

leave in fridge overnight

pre-heat oven to 140 degrees

remove meat from liquid and leave on a rack over top of a baking sheet

place the sheet in the oven

it will take a long time, sometimes almost 24 hours. when it is dry you'll see it start to crack.
