Boil carcas until meat falls from the bones. Cool. Remove all bones. Separate chicken from stock. Chill overnight

Skim fat from chicken stock. Chop vegetables and add them and barley to stock. Cook until vegetables are tender. Add chicken meat. Add all spices but salt.

Simmer until all tastes are blended. Serve salt with soup so it can be added to taste.
Note: Best after 1st day, refrigerate unused portions.
