Directions:  
1, prepare stock add extra 1 litre of boiling
2 fry potaoe(diced), sliced carrot, chopped onion and finely sliced or chopped fresh ginger in 1 tsp groundnut oil
3. add frozen sliced carrots fry briefly then add stock
4. cover and simmer for upto 15 minutes until tender.
5. Blitz together with hand blender or in smaller portions in mixer.
serve garnished with a tsp each of natural yighurt and chopped fresh coriander
