Directions:

Heat non-stick pan with oil. When hot, add tortilla, one at a time. Heat and flip. When slightly cooked, set aside on plate. Continue until all tortillas cooked.

Assemble in baking dish: corn tortilla with about 2 tablespoons of spicy chicken, about 2 tablespoons of cheese, roll and place in dish. Repeat until all enchaladas are rolled and placed in baking dish.

Add cooked enchalada sauce. Then add about 1 cup of cheese on top.

Bake in 350 degree oven for about 30 minutes or until cheese melts completely.
