Directions:  
In a stock pot, pan fry 2 slices of bacon, cut into pieces until crispy. Remove from pan and set aside.
Add potatoes, chopped into a large dice. Stir to coat. Add smashed garlic clove. Stir until fragrant. You can remove the garlic now or in the next step, the longer you leave it in, the stronger the garlic flavor.
Add chicken stock. Bring to a simmer and cover until potatoes are fork tender, about 20 minutes.
Using a stick blender, mash potatoes to create a creamy soup. Add green onion and half of the reserved crispy bacon.
Serve with shredded cheese and sour cream.
Salt & Pepper to taste.
