Heat oil in a large skillet.

Shred coconut in a food processor until finely chopped. Combine with panko. Move to a shallow bowl.

Lightly beat egg whites in a shallow bowl.

Place cornstarch in another shallow dish.

Sprinkle shrimp with salt.

Dip shrimp into cornstarch, then egg whites. Coat with the coconut mixture.

Fry in oil until lightly brown on each side, about 2-3 minutes.
