Directions:  
Cut bread into small cubes, place in greased 13x9 baking pan. Lightly saute spinach, ham, brocolli, onion (and any other veggies you may have on hand) and sprinkle over the bread cubes.
Beat eggs and milk until well blended; pour oven bread and sprinkle cheese over the mixture. Let pan sit for 20 minutes or over night in the refrigerator.
Bake at 350 for about 45 minutes or until a knife poked in center comes out clean.
