Directions:  
1)In a large bowl, combine flour, sugar, baking soda and salt.

2)In a small bowl, whisk eggs, buttermilk and oil. Stir into flour mixture until just combined. Stir in corn.

3)Heat a nonstick griddle or skillet over medium heat. For each fritter, pour 1/4 cup batter onto the griddle. When bubbles break the surface and the bottom is golden, flip and cook the other side until golden (about 2 minutes per side). Cook remaining batter in batches, keeping fritters warm in a low oven until they are all cooked.
