Pour broth in a pot. Add dried thyme and celery seeds. Simmer slowly for 5 minutes.

Add uncooked chicken breast whole and allow to cook gently for 15 minutes.

Meanwhile, dice the onion, celery and carrot.

Remove chicken when no longer pink inside. Add vegetables and simmer gently.

Once chicken is cooled slightly, chop into small cubes.

When vegetables is nearly cooked, add egg noodles and simmer until they reach desired doneness (5 to 10 minutes depending on brand of noodles).

Just before serving, add chicken pieces, stir through to warm.
