Directions:  
Combine flour, salt, and pepper in a large ziploc bag.
Put the Safflower oil in a large cast iron skillet (can use non stick) and heat over medium.
Take a chop at a time and drop it into the ziploc bag; shake to coat the chop. Put the chops in the skillet once the oil shimmers and sear both sides to golden brown.
Remove to baking sheet and finish cooking in the oven at 375 degrees for 15 to 20 minutes depending on the thickness of the chops.
Discard the ziploc bag and any remaining flour mixture.
