Chop green onions and sautee in a medium sauce pan until fragrant. Add garlic powder.

Add spinach and cook until spinach is cooked down, about 2 minutes.

Take off heat. Add cottage cheese, sour cream, and 1 cup montery jack cheese. Mix well.

Tortillas can be fried or not. For lower calories, do not fry. Fill tortilla with about 2 tbsp of mix. Roll and place in casserole dish seam side down.

Lay tortillas close together in casserole dish. Cover with one can of enchilada sauce.

Cover with remaining cup of Montery Jack cheese.

Cook at 350 degrees for 20 minutes, until cheese is completely melted.
