Directions:

Slice onions in half from stem to root. Trim ends and of course the dried outer skin of the onion. Cut in 1/2 again and slice thinly so you will have slices of onion quarters when you are finished.

Saute in olive oil over low heat. Do not brown. Cook them until they are limp and light colored, stirring occasionally.

Take the thin skin off of the peppers with a swivel peeler. This is the annoying prep part! cut the peppers into thin strips.

add to the onions and cook on medium heat for about 25 more minutes, stirring every 3-5 minutes. Add a little splash of water if the sauce begins to stick to pan bottom.

Season with salt, black pepper and hot red pepper flakes to taste.

this sauce is sweet and is very good by intself with a little spinach pasta and freshly grated parmigiano reggiano. It is also delicious with lamb stuffed ravioli. I will add that recipe but it might not belong on this site...(Delicious anyway!)
