Description: Egg beaters, onions & peppers. You can also not fold over after the broiler and cut it into 4-6 pieces. (less messy) I add a splash of hot sauce after reheating. Change servings to 2/3 if you cut into 6 pieces.

Directions:

Spray large frying pan with canola oil and heat on medium. Preheat broiler

Chop vegetables in medium pieces (3/4") and microwave on high for 45 seconds. Pour off any liquid and reserve vegetables.

Mix egg beaters, egg whites, and whole egg together and pour into pan.

Cook over medium heat, lifting edges and rotating pan to allow uncooked egg beaters to go under the cooked portion. Add vegetables to top of omelet.

Place pan under broiler when bottom is done to finish cooking. NOTE-Omelet will puff up

When top is browned slightly, take out of broiler and fold over.
**Cut in four pieces and reserve the other pieces to heat up another day.
