Preheat oven to 350F. Lightly coat a rimmed baking sheet with cooking spray.

Spray garbanzo beans with cooking spray and pan fry over medium heat in a saute pan for 10 minutes.

Spread garbanzo beans on baking sheet and season to taste. Roast on bottom rack of oven, shaking pan every 15 minutes, until brown and crunchy-about 45-50 minutes. They should feel hollow and crisp. Cool before serving.
