Preheat oven to 350 degrees. Lightly oil the sides and bottom of a standard loaf pan.

In a large mixing bowl, combine all ingredients with your hands. Place i the prepared loaf pan. Do not pack too tightly.

Bake for about an hour. Remove from oven and allow to sit for 10 minutes before cutting. Serve with green salad or roasted vegetables. Left over meatloaf is excellent in a pita or flour tortilla with lettuce, tomato and your choice of sauce or dressing. To make yogurt cheese:

Place 4 layers of damp cheesecloth in a fine mesh sieve or colander. Place the collander over a bowl.

Add 1 cup of plain low fat yogurt on top of the cheesecloth and let it drain in the bowl. Place in the refrigerator overnight.

The next morning, discard the water from the bowl. The very thick yogurt which remains in the sieve is yogurt cheese.
