Basic Tomato Mixture

20  lb.		Tomatoes
2  tablespoons		salt
1  teaspoon		celery salt
3  tablespoons		Worcestershire sauce
1/2  teaspoon		onion power
1/4  teaspoon		Tabasco sauce

Wash tomatoes, cut in halves and remove stem ends: do not peel. Remove any spoiled or green spots

Place tomatoes in large canning kettle over high heat. Add remaining ingredients; bring to a full boil, stirring frequently to prevent sticking. Cook 5 minutes.

Remove from heat and ladle mixture into a food mill, colander or large sieve. Strain off any liquid that pours through easily. Stir just enough to let juice pour through. Use it to make the cocktail.
