Directions:

Heat a large Wok or Saucepan over medium heat, add olive oil. While oil is heating cut chicken thighs into desired small chunks, add to oil oil with salt, pepper and ground ginger.

Cook chicken untill browned and cooked through. While cooking chicken, clean and peel carrots. Slice into thin slices and add to chicken once chicken has browned.

Add remaing veggies when carrots are beginning to appear transparent around the edges.

Add soy sauce, stir and cook untill all veggies are heated through but not overcooked and sogggy.

Serve 1 cup veggie/chicken mix over 1 cup rice.
