Whisk buttermilk, 2 tablespoons hot sauce, and 2 tablespoons vinegar in a large bowl. Add chicken, toss to coat. Put in fridge for at least 10 minutes to 1 hour, stirring occasionally.

Meanwhile, whisk flour, cornmeal, bread crumbs in a shallow dish. Whisk the remaining hot sauce and in vinegar in a small bowl and set aside.

Spray baking sheet or pampered chef dish with cooking spray and preheat oven to

Remove chicken from marinade and roll in flour mixture until evenly coated. Discard remaining marinade and flour mixture. Sprinkle both sides of chicken with cayenne pepper.

Cook chicken for 15 minutes. Flip and brush with remaining hot sauce and vinegar mixture. Cook an additional 5 minutes.
