Directions:  
coarse chop veggies (since this will be pureed, chop just small enough to cook)
melt butter or heat oil
add veggies, including garlic and orange zest
cook 5 min to soften
add curry powder, cook 1-2 min
add broth, tomatoes, orange juice, apples (chopped)
bring to boil, simmer 30 min until vegetables are tender
puree
serve hot
