Grate ginger root, mince garlic, chop scallions, and press tofu.

Stir cornstarch into broth and set aside. In a large heavy-duty skillet, heat oil on high. Add ginger, garlic, and half of the scallions. Stir-fry for about 30 seconds, stirring constantly to prevent burning. Add Hoisin sauce and pork. Stir frequently for 3 to 5 minutes, until meat is almost cooked through.

Add soy sauce and broth mixture and bring to a low boil. Add tofu and remaining scallions. Simmer 5 minutes. Reserve half of the dish and refrigerate. Serve remainder with brown rice and a green vegetable, such as steamed broccoli.
