Directions:  
Place potatoes in a large saucepan; cover with water. Bring to boil, cover, then simmer until fork tender, about 15 minutes.

Reserve 2 TBSP of the potato cooking liquid. Drain potatoes and transfer to a large shallow bowl. Slash potatoes in half with a paring knife; drizzle in olive oil and reserved potato water and salt and pepper. Roughly mash potatoes with a fork. Adjust seasonings, if desired, and stir in parsley. Serve immediately.
