Directions:

Pre-heat oven to 400 degrees. Grease muffin pan or insert paper muffin cups into pan.

In a medium bowl, mix boiling water into bran cereal, then set aside.

In another medium bowl, mix all dry ingredients together (including fruit and nuts), then set aside.

In a large bowl, separate 4 egg white and add the wet ingredients.

Add bran and other dry ingredients to large bowl. Mix together with spoon just until dry ingredients are wet (do not over mix).

Fill muffin cups 3/4 full. Bake for 20-22 minutes. Let muffins cool on rack.

NOTE: Allow muffins to completely cool before freezing.
