Preheat oven to 350 degrees F.

Combine bread crumbs, salt, pepper, onion, garlic, curry powder and Parmesan cheese in one bowl. Put the egg white in another bowl.

Pound the chicken into a consistent thickness. Place in the egg white and then the bread crumbs - fully coating.

In a skillet, heat the olive oil and then place the chicken in to sear the bread crumbs. Allow the chicken to sit for a few minutes on each side until the bread crumb coating is brown.

Move the chicken from the skillet into a baking dish (spray with cooking oil) and place in the oven for 20 minutes or until the chicken reaches an internal temp of 160 F.
