Description: Ham hocks are actually smoked pig's feet. I used fitclick's "smoked pork shoulder picnic ham." I got 6 oz of meat after cooking, but entered 7 oz since the fat melts into the soup. If you chill the soup before serving, you can lift the fat off.
Ingredients:  Makes 8 servings (10 cups)

Directions:  
Place all ingredients, in order, into instant pot. Cook on high pressure for 15 minutes. Natural release 20 minutes, then quick release.
Remove hocks and set aside to cool.
Discard bay leaf.
Bone hocks; discard bone, fat, and gristle.
Mince meat and add back to pot.
Optional: chill overnight and discard fat from the top of the pot.
