Directions:

Prepare 1 cup of dry rice per package directions to get approximately 3 cups of cooked rice.

Dice onion, celery and carrots saute in olive oil 5 - 8 minutes until desired tenderness.

Mix 1 can cream of mushroom soup and 1/2 can of milk in a large mixing bowl. Add in the zest and juice from 1/2 the lemon. Add the rice.

Add the vegetables to the rice mixture and use the same pan to brown the chicken breast. I usually cut the breasts into smaller portions. Brown 2 minutes on each side adding the other half of the lemon juice on the second side.

Spray a 13X9 baking dish with cooking spray. Pour in the rice mixture. Place the Chicken on Top. Bake at 350 for 30 minutes.
