Directions:

Chop onion and cut potatoes into 1/2 inch cubes.

Spray oil or PAM onto small omelet pan and place over medium heat until hot.

Add potato and onion and brown about 5 minutes.

In small bowl, whip eggs and milk.

Pour egg mixture over potatoes and onion and cover with lid.

Cook until top of egg is set, then add cheese slices.

Once cheese melts, cut omelet down center and fold over.

Serve one-half of omelet per person.
