Directions:  
Wash bok choy, cut off bottoms and slice into bite sized pieces. Heat oil in a large wok or a pot large or skillet over medium heat. Add the onion and stir-fry until softened, 2 to 3 minutes. Add the bok choy, soy sauce and rice vinegar. Cover and cook until tender, stirring occasionally, about 8-10 minutes. Remove from heat and serve.
