Directions:  
Mince garlic. Heat oil in a large skillet and add garlic and onion and cook until onion is soft, about 3 minutes. Add spices, stirring well to coat. Cube tofu and add it to pan along with coconut milk, vegetable broth and tomatoes; lower heat and simmer until heated through, about 5-7 minutes. Before serving, season to taste with salt and pepper.
