Directions:

Saute onion , garlic, and carrots in oil in large soup pot, about 5 minutes until beginning to soften.

Add the veggie juice, broth, water and seasonings. Turn heat ot high.

Chop and add remaining vegetables adn add to pot. Stir.

Once soup reaches a boil, turn to low ans simmer 1 hour.

Add salt and hot sauce as desired. Good with ctusty bread.
