in a lg bowl combine cereal and milk.let stand for about 5 minutes. add egg and oil.stir in poppyseeds,lemon peel and lemon juice.add all the dry ingredients. mix just until well combined. portion evenly into muffin tins coated with cooking spray, bake in a 400 oven for approx. 20 minutes.
