To make Cupcakes: Preheat oven to

Line 12 cup muffin pan with paper liners. Whisk together flour, cocoa powder, baking powder baking soda, and salt in bowl. Puree avocado in food processor until smooth. Add maple syrup, soymilk, oil , and 2 tsp vanilla...blend until creamy. Whisk into flour mixture.

Spoon batter into prepared cupcake cups. Bake 25 minutes, or until toothpick inserted into center comes out with some crumbs attached. Cool.

Whipped Cream Frosting In a large mixing bowl place the whipping cream, vanilla extract, and sugar and stir to combine. Cover and chill the bowl and wire whisk in the refrigerator for at least 30 minutes. When chilled, beat the mixture until stiff peaks form.
