Mix all ingredients in a blender or food processor. Scrape down sides and blend again. Batter may be used immediately or refrigerated overnight. If batter is too thick, thin with additional water.

To make 7" crepes you will need a 9"-10" pan that measures 7" across the bottom. If pan is not non-stick, brush it with butter or oil.

Use 2-3 T. of batter for each crepe.

Crepes may be refrigerated for 5 days stacked with wax paper between them. They may also be frozen packaged the same way.
